Iowa State Fair 2012 Farm Bureau Cookout Contest Winning Recipe

The Iowa State Fair Farm Bureau Cookout Contest is the time to see who really is the best at cooking out. Daryl Witt, the 2012 winner from Carlisle, shares his recipe with IPTV.

NAME: Daryl Witt, Carlisle

RECIPE NAME: "Slap Yo’ Daddy" Ribs 

 

Ingredients:

  • Loin back ribs

Rib Rub:

  • 4 Tbsp. Kosher Salt
  • 2 Tbsp. white sugar
  • 2 Tbsp. Brown Sugar
  • 2 Tbsp. mild chili powder
  • 2 Tbsp. paprika
  • 1 Tbsp. ground cumin
  • 1 Tbsp. granulated garlic
  • 1 Tbsp. black pepper
  • ½ tsp. cayenne pepper

Wrapping ingredients:

  • 3/4 c. brown sugar
  • 1/3 c. agave nectar
  • 1/3 c. apple juice

Sauce:

  • 1 c. Your favorite BBQ sauce
  • 1/4 c. agave nectar
  • 2 Tbsp. hot sauce
  • 1/4 c. apple juice

Instructions: 

  1. Heat smoker to 250 degrees
  2. Put a thin layer of yellow mustard on both sides of ribs.
  3. Put 2 Tbsp. of rub on both sides of the rack of ribs.
  4. Smoke 2 hrs.
  5. Take ribs off smoker, put ribs on a big sheet of foil, add brown sugar, agave, and apple juice to both sides of ribs.
  6. Wrap ribs and return to the smoker meat side down.  
  7. After 1 hr. use a toothpick to check tenderness. After ribs are done, take off.
  8. Mix sauce ingredients, put a thin layer of sauce on both sides, return to foil for 15 minutes.
  9. Enjoy.
